je suis de is used with feminine nouns
je suis du is used with masculine nouns, for example:
je suis de France. La France is feminine
je suis du Canada. Le Canada is masculine
je suis des États-unis (United States is a plural noun so des is used instead of de or du)
Je suis de is also used with cities. Je suis de Paris

@Alex_mont yes for most of the cities, but as always there are some exceptions. You should learn them by heart is easier that way. :-)

We don't really use that formulation so I'm adding what seems more usual for me in ()
"Je suis de" is used with a city
Examples :
Je suis de Paris (Je suis Parisien)
Je suis de Lyon (Je suis Lyonnais)
Je suis de Nice (Je suis Niçois)
"Je suis du" is used with cardinals
Examples :
Je suis du Sud (Je viens du Sud)
Je suis du Nord (Je viens du Nord)
But using "du" or "de" still really situational because it has the same meaning, I can't explain you why, for the rest it has something to do with masculine/feminine I guess ><

exemple le Nord : je suis du Nord
exemple le pays basque : je suis du pays basque
Par contre : Paris > je suis de Paris
la Bourgogne > je suis de Bourgogne
Saint-Tropez > je suis de Saint-Tropez
